For the Love of Gluten: Central Market Cooking Class

Gluten has gotten a bad name recently, which led April, our instructor for the evening, to design a class completely based around Gluten and how delicious it can be.

We made Naan, Flour Tortillas, Pizza and Cream Puffs. As you can imagine, we left full and blissfully in love with gluten! 

The Teacher

April was knowledgeable and passionate about all things gluten. Her tortilla recipe she taught us was even passed down to her from her grandmother! She was great about making sure we fully understood the process before we started and checked in on our progress as we worked. Luckily she had two assistants who helped with the class as well because time got a bit tight towards the end.

The Setting

The class took place at Central Market’s North Lamar location on the second floor above the store. Each “team” of four had a table to ourselves where we enjoyed everything we made along with a beer or wine and tea and water provided by Central Market. The kitchen was open with a mirror and screens aimed at the counter and stove to ensure that everyone was able to see what was happening. The layout also meant that we were able to get hands on since each team had their own space to work.

The Class

This class was A LOT. It was a lot of doing, socializing, and eating and was A LOT of fun! We started by walking through each recipe before heading into the kitchen and hitting the ground running. During the class we made: Pizza Dough, which we made into mini pizzas, Chile Garlic Naan, which we ate with Kolhapuri Vanghi, a deliciously spiced eggplant curry, Flour Tortillas smeared with butter & salt, and Pate-A-Choux made into cream puffs. Did I mention we ate a lot? There was plenty of time to socialize and enjoy the company of the people you were with, while also getting to do hands on cooking. We did end up running over time, but no one seemed to mind much since the last thing we ate was the cream puffs and they were well worth it.
